Sourced from dedicated smallholder farmers in the Molino Norte area of Matagalpa, known throughout Central America for producing some of Nicaragua's finest specialty coffees, these beans are grown at elevations between 900 and 1,590 meters. The careful selection of Yellow and Red Catuai, Catimor, and Parainema varieties, combined with meticulous processing that includes a 12-14 hour fermentation and careful drying on patios and raised beds, brings out the best characteristics in these exceptional beans.
